Spinach Enchiladas
We usually have these enchiladas at a local restaurant. Because of the economy, we wanted to try them at home. Well, this recipe is really GOOD. I served them with some of the left over sour cream and chopped up some tomatoes, onions, garlic and one jalepeno and a squeeze of lime juice. As well as the mexican rice that I got the recipe for. We loved ALL of it!
