I loved this rice!!! I gotta tell ya that we had some left over and I liked it even better the next day. It seemed like the flavor was more absorbed in the rice or something. Anyway, it was quite tasty!

We usually have these enchiladas at a local restaurant. Because of the economy, we wanted to try them at home. Well, this recipe is really GOOD. I served them with some of the left over sour cream and chopped up some tomatoes, onions, garlic and one jalepeno and a squeeze of lime juice. As well as the mexican rice that I got the recipe for. We loved ALL of it!
