Southwest Stew

This is really good. A little fresh finely chopped jalapeno or habenero pepper is a great addition and simmered with the other ingredients. Also at the end a pinch of coriander and a dollop of sour cream as a garnish. Vegetarians use your favorite tvp meat substitute for the ground beef I used Worthingtons Gran Burger 1 cup soaked in one cup warm water for 15 minutes in place of the ground beef. It turned out really yummy.

Make-Believe Middle Eastern Chicken

Very good with basmati rice. Vegetarian version is use mock chicken recipe using frozen tofu. Can't say how kids like this since all the pups have left the wolf den many moons ago. This was a howling success with my mate. I also used a little more cumin than recipe called for.

Cottage Cheese Loaf II

This is really quite tasty. It is great just following the recipe or for a little added flair add some chopped green pepper or about 1/2 cup shredded fresh zucchini.

This is a really good dish for potlucks or picnics. Vegitarians can substitue the mock chicken recipe which uses frozen tofu. This recipe is in the vegitarian section.

Mrs Espy's Enchilada Sauce

Muy bien! It is a very easy recipe to follow. However, one should be aware of the type of chili powder they are using. I am quite experienced in Mexican cooking & I use a home made chili powder so cut down the amount of chili powder to 3 tbsp. But for the less experienced cook may take a little time adjusting the amount to their particular taste. This is definately a recipe one should try if they want a true home made Mexican enchilada sauce. It is well worth the effort of experimenting with various chili powders. Once one masters this part of the recipe it is really easy to make.

Cumin Corn Burgers

I did not use ground meat but used Morningstar Farms ground meat substitute and I fried them in a pan. Really tasty. I hope other vegetarians will try this.

Chili Potato Burritos

This is a really delicious dish. It is good with either the red or green chile enchilada sauce. I used 1-1/2 tsp of freshly ground dried Pasilla chiles. It gave the recipe a bit of zip but not too hot, though I admit all of us at the silverwolf's den are lovers of spicy food.

Yummy Veggie Omelet

Really great for weekend brunch. If you like to make this with a Mexican flair add 1 tbsp of finely chopped fresh jalapeno pepper to the veges before cooking them. Then when placing the filling in the omelet add 2 tbsp of your favorite salsa and a little fresh snipped coriander leaves.

Easy Mashed Potato and Roasted Vegetable Enchiladas

Muy bien! This recipe is a favorite for sure. It goes great with either red enchilda sauce or the green chile enchilada sauce. Used ground dried Pasilla Chiles since I could not find poblano chiles in the grocery store I was shopping at. It worked really well though I cut down on the amount to 1-1/2 tsp. It worked out really well.
