Zucchini Parmesan

I sauteed the the zucchini as suggested by others and it was not at all watery. i also added a few tbsp of grated parmesan. I will make this again and again

Mushroom Lentil Barley Stew

this was great. I couldnt find shiitake so i used extra button mushrooms. I also had no savory so i subbed sage and thyme. I used fresh onion and added a bit of chopped carrot and chopped spinach. turned out delicious !!

the kids really enjoyed this. I found the stuffing too mushy and a little bland. i think ill leave out the water next time and add extra seasonings. Maybe use some feta as well.

So yummy ! I didnt change a thing. Stuffing the pasta is much quicker if you put the cheese mixture in a ziploc with the end cut and pipe it in.

this was excellent i made this exactly as written for the boys, i also used the marinade on diced tofu for myself served it up with some rice and used extra sauce to pour on the rice .

i added some diced red peppers and used cream of mushroom instead of cream of chicken. I 2 variations of this one with the ground beef for my husband and kids and one with crumbled tofu for myself and both turned out great, this will be a regular dish here for sure.

good salsa , i like my salsa chunky so i only added put about half the tomatoes in the food processor and stirred the other half in after , i also added a tsp of chili powder and 1 tsp of cayenne
