About this Cook
I'm 53, married, mother of 3, grandmother "nanny" of 6. I'm a nurse, a "fitnes walker" of over 20 years.always looking for healthy recipes. been cooking a long time. Just discovered this site. love finding new recipes and love reading the reviews.
My favorite things to cook
I love to bake. The problem is, I love to eat everything i make!! also like trying new casseroles and mexican dishes.
My favorite family cooking traditions
I cook the exact same thing for every Thanksgiving and every Christmas eve dinner. My daughter makes the same things too, when we can't be together for holidays!
My cooking triumphs
hmmmm.......I'd have to think about that one. I think my home made mac and cheese is delicious, but not sure I'd classify it as a triumph.
My cooking tragedies
many. cooking is trial and error!!

Creamy Carrot Soup
this is delicious soup. i used fat free half and half in place of the heavy cream for a lower cal version. also, it works fine to leave veggies in large chunks rather than to waste time slicing the carrots. it all softens anyway.

Chocolate Scotcheroos
awww....yes. this is what i was remembering from years ago. i did what some others did and doubled the chips on top. almost too much for me and i have a sweet tooth to end all!! i used to use special k but only had rice krispy's. still yummy tho! thanks to those who answered my request.

Lemon Glazed Cake
i love this cake. it seemed to get moister and more lemony with each day. i cut the oil to 1/3 cup and next time will try it with egg beaters to make it even lower in fat and calories. also skipped the butter in the glaze. i used a bundt pan but next time will use 9x13 for better distribution of glaze.
