I love to cook but I'm not good at making things up as I go. I like to follow recipes step by step the first time I make them, then the second time I can sometimes change it up a bit.

I love making dessert :) It's just so rewarding because everyone loves it.
My cooking tragedies
I once tried to make a dessert that called for one package of koolaid. Well... that one package just seemed so small to me so I put in 2 packages! Twice the goodness right? WRONG! This turned out tasting horrible :P So bad in fact that my family asked me to never make this again even though I said next time I would only use the 1 package the recipe called for. Oh well :) That is why now I stick to the recipe 100% the first time I make something new.

Chicken and Potato Parcels
This is a great template for any mix of veggies / sauce and chicken. I didn't peel the potatoes, we like the peels. I did pre-cook my potatoes in the microwave for 5 mins with a little water per another review. Then we foiled a cookie sheet and cooked it in the oven @ 350 for 1 hour. It came out perfect and was easier than making packets. I can see us adding in different veggies or trying different sauces but over all it was easy! We used Sweet Baby Rays and it was mmm mmm good :)

Oven Roasted Potatoes
I followed the recipe exactly except I left the skin on the potatoes. I used 4.5 potatoes just to be sure I had enough. When I mixed the spices/oil together at first it didn't look like there would be enough, but once I mixed in the potatoes it spread over them all well. It was even actually a little bit two spicy so I would use maybe a fraction less of each next time. When I went to turn them, they stuck to the pan a bit making me wonder if I should have used a little more oil. They tasted great and otherwise were very easy! I will make them again :)

Chicken Enchiladas V
The recipe, as is, would be bland. I used one can of Enchilada sauce along with the cream of chicken. Next time I think we will use no cream of chicken and either use 2 cans of Enchilda sauce or 1 can of enchilda sauce and 1 can of something like Fiesta cheese. I didn't change anything else. It was very easy to make! I made 4 with real chicken and 4 with veggie chicken (morningstar) all in the same pan. My husband LOVED it but agreed it needed a little extra zing.
