Moist Banana Muffins
I know people hate it when you rate a recipe after making dozens of changes but this was a great base recipe that I adjusted to fit the pantry! My 2yr old was asking for muffins and all I had was one frozen banana and no eggs! I halved the recipe but still needed to make up the 1/2 banana so I added some frozen strawberries and thawed and mashed them with the banana. Since they were frozen they added a bit of moisture to the recipe. I mixed them with the mayo then added the dry ingredients. When I got to the baking soda I realized I was out so I just tripled the baking powder and it worked just fine. I filled 22 mini muffins with 1/2 the recipe and baked at 350 (in a toaster oven) for 15 mins. They are SO good! I can't believe I just threw them together with what I had on hand!
