Bob's Mexican Stuffed Chicken
Great flavor! And pretty easy to make. I used a green pepper instead of yellow, turned out great. You could easily make this a spicier dish by adding cayenne pepper or stronger salsa. Served with cornbread, delicioso!

Empanadas
The pastry is really soft and tender, plus this dish is very quick and easy. The make sure to flour your work surface well, I had to re-flour halfway through rolling out the dough. I made these with peach preserve filling and they were great! Tasted a bit like apple pie
