Old Fashioned Rice Pudding
This recipe is FANTASTIC! I love that you don't have to use eggs in it, and that it is also very flexible with dietary restrictions. I am lactose intolerant, so I wanted to write a review to let others know that I substituted vanilla flavored ALMOND milk (the kind by Almond Breeze) and it was delicious. Similarly, I used Splenda in place of the sugar and enjoyed the taste very much. Mine was ready in 45 minutes rather than 60, and perhaps this was due to the almond milk, but either way, this was a huge hit. I am going to make more again tomorrow as this batch is already gone!
