About this Cook
I’m a 30 year old newlywed with a son (age 8) living in the home and three step-daughters (twins age 7 and a daughter age 6) who visit regularly. I never really learned to cook, and never cared to until recently. I had a few dishes that I made well but I could count them on one hand and they were all pasta dishes. Now as a “wife” I’ve embraced the idea of cooking daily (well 4 days per week) and so far it has been an enjoyable (and tasty) journey.
My favorite things to cook
Pasta, Fish, Macaroni & Cheese
My cooking triumphs
I have always been good at making pastas, although until I started really cooking this year I have always been chained to the specific instructions on a recipe. Lately, fish has become specialty; I made a tilapia in a dill cream sauce and a snapper in a citrus cream sauce that my husband described as “impressive” and “restaurant quality”. He’s even said he thinks I’m ready to cook for company.
My cooking tragedies
My husband asked for a grilled cheese with bacon on it, sounds simple enough but it turned into a disaster. I think the problem was I was multi-tasking a little too much and made the worst grilled cheese in history.

Chicken, Garlic, and Sundried Tomato Pasta
Great recipe and very easy to make, I wouldn't say there is anything really "special" about this dish which is why I only gave it 4 stars but I've made it twice already and will continue to do so.

Snapper with Linguine and Citrus Cream Sauce
EXCELLENT! I left out the shallots because I forgot to buy them and used brown flour. Really is restaurant quality.

Tilapia with Creamy Sauce
My husband said this meal was "Impressive". I modified the recipe based on the other reviews. I reduced the lemon juice by half. I used alot more cream cheese (about 6-8 table spoons) and added a little heavy whipping cream to loosen it up. I served this with steamed asparagus and drizzled the sauce over the fish and the asparagus. It was UMMMM MMMM GOOD!
