My favorite things to cook
I love to bake ... cooking-wise I am best at breakfast or Italian. I have a choclate cake from scratch that is highly requested :) My guacamole is also quite tasty and easy!
My favorite family cooking traditions
My mom's chicken cutlet parmesan is the best - well all of her Italian food is amazing ... meatballs, baked ziti ... her trick is in the sauce (completely homemade - starts w/whole tomatoes)
My cooking tragedies
Eggplant parmesan ... not so good

Easy Chicken Enchiladas
These enchiladas were really good. They even taste great re-heated 3 days later. I altered the recipe just a little ... in place of flour tortillas i used corn tortillas (heat 3 at a time wrapped in wet/damp papertowel in mircowave for 30 secs to prevent tearing when rolling) also - i grated the onion
