Fajita Marinade I
Based on the recommendations of other reviewers, I have adapted the recipe and really enjoy it now. My husband and I enjoy foods with a bit of "kick". I have reduced the amount of water, added jalepeno peppers, cilantro, cumin, chili powder and cayenne pepper. I do not use the smoke flavouring.

Green Chile and Rice Casserole
Great side dish. A nice variation to plain wild rice. I made it for a dinner party of 7 so I doubled the amount of rice. I used 2 packages of Uncle Ben's Wild Rice. I reduced the amount of sour cream and cheddar cheese. Even though I doubled the recipe, I only used 1 cup of light sour cream and 2 cups of cheddar cheese. I used 2 cans of green chilies and used the juice. I didn't drain them as the recipe suggested. This was a very easy recipe. I made the rice earlier in the day and then just before the dinner party, I layered all of the ingredients and baked the dish. It turned out great.

Maple Apple Crisp
Great dessert served with French Vanilla Ice Cream. I made it ahead of time and then just warmed it up prior to serving. As other reviewers suggested, I used 3 gala apples, 2 granny smith and then doubled the crumble. I reduced the amount of maple sugar and butter. Even though I doubled the crumble, I used 1/2 cup of butter total and probably no more than 1/4 cup of maple syrup. I just used enough syrup to lightly coat the apples. I also added 1 tsp of cinnamon and nutmeg to the crumble.
