Southwestern Egg Rolls

Instead of frying I just brushed w/ oil and baked at 475 for about 15 min like the other reviewers. I like to triple the recipe and have lots ready in the freezer. Serve with Mexican Rice II recipe from this site, as well as sour cream, guac, and fresh salsa.

Mexican Rice II

Super yummy when served w/ Southwestern Eggrolls. Also had issues with "puffing" but it didn't affect the outcome of the taste. Highly recommend.

Very yummy... couldn't find strawberry vodka so used raspberry and pomegranite instead. Served in a martini glass. Beware... these go down easy but have an extreme kick!

Key Lime Cheesecakes with Raspberry Swirls

BIG hit with the crowd we entertained. Nice presentation (used regular red raspbery jam), perfect size serving (used regular sized cupcake liners). Was a bit of work to squeeze the key limes so I probably won't make too often, but a nice compliment with the Mexican theme we had. Will make again for special occasions.

Black Bean and Salsa Soup

Highly recommend for a quick and easy dinner. So fantastic and SOOO easy. Only had 1 can of black beans so used it with a can of red kidney beans. Turned out great. Next time I may throw in a handful of corn and some fresh cilantro. Easily adjustable to your family's tastes.

Creamy Hot Chocolate

Made double batch for a Christmas party. The adults enjoyed it as much as the kids (served with a bottle of Peppermint schnapps on the side for people to add if they wanted.) Also, used milk instead of water to make it richer. One guest said it was like a dessert in a cup. Use water if you want it less filling.

Christmas Stars

Very yummy. Didn't have star cutters so I used a glass to make round cuts and mini Christmas cutters for the center cut (mitten, tree, candy cane). They came out looking great (just like ones I've seen sold thru Williams Sonoma). AND they tasted fabulous. Used raspberry preserves.

Asparagus Wrap

Great taste! Used fresh, slightly steamed, asparagus. Also, did a test run on two of them by baking whole vs. pre-cut. I did need an additional 5 minutes baking time and the whole ones were difficult to cut after baking (too gooey and the soft, stringiness of the asparagus was hard to cut through) so I would also recommend pre-cutting prior to baking. Wondering if I could do something similar with apples and gouda or figs and brie... Any suggestions?

Roasted Potatoes with Greens

Very good. I use more spinach than called for since a cup really ends up being little after it wilts. Good to serve with grilled foods.

Overnight Bubble Bread

Followed as directed but it really didn't turn out as I thought it would -the pudding didn't mix and stayed dry on top. My family didn't eat it and I threw away the majority of it. If you try it, halve the recipe and mix the pudding with the butter to pour on top so it won't be dry.

Amy's Cilantro Cream Sauce

Didn't change a thing - so, so good. Took it to a Cinco de Mayo party and several people asked for the recipe. Served with carrot sticks, celery and chips. Has a nice "zing" to it so be prepared. Can't wait to try on fish or chicken.

Triple Berry Crisp

Great, easy recipe! Used strawberries, raspberries and blueberries. Cut the recipe in half and used a regular pie dish. Came out looking great and was a snap to put together. Don't think it was too sweet but I think it depends on the berries you're using. Served with vanilla ice cream. Good rewarmed in the microwave the next day too.

Slow Cooker Rosemary and Red Pepper Chicken

Excellent! Used suggestions to add 1/2 c sauce and 1/2 c red wine and also removed sausage from casing and pan cooked before adding to slow cooker. I used a whole chicken vs. breasts which made the sauce a little thin so I added more cornstarch. The chicken came out sooo good. Served with angel hair pasta and good crusty bread. Everyone loved it and I have been asked for the recipe several times. Has become a staple meal on my menu list.

Quick Wine and Cheese Puff

Poured this into mini muffin tin instead for appetizer tray along with fruit and cheese. Very good, very easy and pretty presentation. One particular person ate the majority of them so I didn't get varying reviews but I enjoyed them and will make again.

Autumn Cheesecake

Highly recommend. Made it for Father's day dinner and it was even loved by the "I-don't-really-like-cheesecake" people. My first time making a homemade crust and it turned out great. I followed the recommendations to microwave the apples a bit, using a pan of water in the oven and letting cool for 45 min in an open oven. Also, don't be afraid to do 1 1/2 or double cheescake filling. Instead of plopping the apples on top, I overlapped them in a circular pattern on the edge spiralling towards the middle. It looked fantastic.

Baked Seafood Au Gratin

This was a great dish. It makes a whole lot so you might want to try half the recipe first. I used 1% milk and it was a bit runny so either cut back on the milk or use whole.
