Quick and Super Easy Chicken and Dumplings

Very satisfying for a very cold night! I must admit I did make some simple modifications though. 1) Substituted refridgerated biscuit dough instead of using the dry mix. 2) To begin, I sauteed onion and cut up pieces of chicken breast (don't like canned chicken), removed from pan and then re-added after the dumplings were almost cooked. 3) Added a can of corn (a must!) 4) Replaced one can of chicken broth for one can of condensed cream of chicken soup. YUM, heated up the leftovers for lunch!

Thai Noodle Salad

Very flexible recipe! Made ahead for weekday work lunches. I know people get annoyed with too many substitutions but with this kind of salad I think it's okay - the dressing is the real recipe! Used wholewheat spaghettini, omitted the cabbage and replaced it with corn, red pepper and sprouts. Subbed shrimp for chicken. Packs and keeps well for bag lunches, better than if I ran out to the deli!

Simple Turkey Chili

Simple & Satisfying! I like my chili on thicker side so didn't add, or need, any water! I think it would be more like a soup if I had. For more flavour, I doubled the cumin and added a bit more chili powder. Will make again! YUM

Sweet, Sticky and Spicy Chicken

Easy & Delicious! I followed other reviewers and floured the strips of chicken before. The only thing I would say is the soy sauce flavour is quite strong; I probably won't use the full 1/4 next time as it's a bit too salty...maybe add a bit more honey and sugar to balance it out?? Will make again for sure!

Chicken Mushroom Linguine

Pretty disappointed. Followed recipe exactly but I found it to be far too bland and a bit "off" tasting hmm...can't really pinpoint it. Won't make again but it was worth the try!

Addictive Sweet Potato Burritos

The sweet potatoes and kidney bean mixture go well together. However, there just seemed to be something missing for me! Only one change to the recipe: I omitted the water as the beans seemed to retain some of the liquid from the can. Not quite "addictive" for me but the recipe is worth a try for a unique, week night supper!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Quick and easy week night supper! Used the helpful tips from the other reviews for minor changes: 1) Used low fat herb and garlic cream cheese; therefore, left out the basil and parsley (but still added four cloves of garlic). 2) Instead of only adding in water to thin out the sauce I used a few splashes of chicken broth. 3) Only had whole wheat rotini on hand so used that which the sauce coated well.

Curried Coconut Chicken

This is a good meal but, to be honest, I was expecting something more tasty due to all the other great reviews! A very standard, reliable, easy curry recipe never the less! I followed the recipe almost exactly except I threw in diced sweet potatoes for the last half hour of simmering! Probably won't make again but it's good to give at least one try!

Asian Lettuce Wraps

Delicious, awesome summer meal! Substituted veggie ground round for the beef. Added fresh bell peppers and bean sprouts in the lettuce wraps. Will make again for a healthy supper!

Chicken Milano

This is a tasty pasta dish, with some minor changes. However, I must admit it was more time consuming and finicky than I thought it would be. I used half/half cream which tasted great but I did have to add some flour in order to thicken it up. Also, I took lots of the chopped sun dried tomato bits out of the sauce at the end because there were so many in it. I had already added mushrooms so the sauce was plentiful. Finally, I pre-cooked strips of chicken and just threw them in the sauce and mixed all together with fussilli pasta (not fettuccine)! Not sure I'll make again on the basis I like other pasta dishes more. Do try it though! A pleasant change!

Sesame Pasta Chicken Salad

Brought it to a pot luck and received rave reviews! Cut the oil to 1/3 cup and increased both the soy sauce and rice vinegar to 1/2 cup each! Delicious! Added a can of corn and diced red & green peppers for some crunch! Will make again!

Angel Chicken Pasta

Excellent, quick recipe! Just a few modifications due to my ingredients on hand: -used cream of mushroom -added 1/2 cup milk -used fusili pasta -cut 3 chicken breast up to bite-sized pieces and cooked for 30 minutes Served with green salad and was a hit! Will make again!

Curried Honey Mustard Chicken

I substituted the chicken for a package of extra firm tofu (cut in bite size pieces). Make sure to still marinate; however, rather than baking it in the oven I stir fryed it in a pan for a few minutes until seared and golden on each side. Threw in some asian veggies! Awesome, quick/easy/delicious!

Bacon Wrapped Chicken

Excellent and, more importantly, very easy! Like the other posts, I precooked the bacon, used a chive flavoured cream cheese and substituted sour cream for mayo! Delicious!
