Quick and Super Easy Chicken and Dumplings
Very satisfying for a very cold night! I must admit I did make some simple modifications though. 1) Substituted refridgerated biscuit dough instead of using the dry mix. 2) To begin, I sauteed onion and cut up pieces of chicken breast (don't like canned chicken), removed from pan and then re-added after the dumplings were almost cooked. 3) Added a can of corn (a must!) 4) Replaced one can of chicken broth for one can of condensed cream of chicken soup. YUM, heated up the leftovers for lunch!

Thai Noodle Salad
Very flexible recipe! Made ahead for weekday work lunches. I know people get annoyed with too many substitutions but with this kind of salad I think it's okay - the dressing is the real recipe! Used wholewheat spaghettini, omitted the cabbage and replaced it with corn, red pepper and sprouts. Subbed shrimp for chicken. Packs and keeps well for bag lunches, better than if I ran out to the deli!

Simple Turkey Chili
Simple & Satisfying! I like my chili on thicker side so didn't add, or need, any water! I think it would be more like a soup if I had. For more flavour, I doubled the cumin and added a bit more chili powder. Will make again! YUM
