Shrimp Lemon Pepper Linguini
Delicious! I used about 12 shrimp and two small sole filets for a family of four. I also used one 14 oz can of chicken broth and cooked it down as directed. I threw in about 3-4 T of capers (no liquid) and went a little lighter on the lemon juice. It had just the right amount of tart flavor. I served it over "fresh" packaged linguini- that makes a difference. Even my kids liked it. It is definitely good enough to serve guests.

Chicken Florentine Casserole
Like the others, I skipped step one. I used only smoked mozzarella (only needed one cup) and the flavor was unbelievable. My boys, age 11 and 14, (who love "good" food) said the mixture of flavors was really delicious! I used fat free half and half, lo-fat cream of mushroom soup, crimini mushrooms, and frozen spinach (which I cooked with the mushrooms), and it all worked terrific! Thank you for a new favorite- and a great way to get more veggies into my kids.

King Ranch Chicken Casserole I
Great recipe. I have made this for years but our family calls it "Chicken Dorito." It's a great way to use up leftover chicken or use a rotisserie chicken. If you don't have tomatoes with chili peppers, I have used plain diced tomatoes and added salsa. That way it is as mild as you want it to be (or your kids want it to be). You can always serve a little side of chili peppers if someone wants more spice.
