Albondigas
This soup was very good. The only problem I had was the same as another reviewer. There wasn't enough liquid. I added two cans of beef broth and another small can of Herdez salsa. It was very good. Had a little kick to it from the salsa. I also added some frozen corn and celery.

Filet Mignon with Rich Balsamic Glaze
This was a quick and delicious glaze. I used rib eye steaks, and cooked them on the George Foreman and made the glaze separately. I doubled the recipe and added a few shakes of garlic powder and sliced crimini mushrooms. Turned out great. Will use again.

Quick and Easy Clam Chowder
This recipe is absolutely the best clam chowder I have ever made. Quick and easy really describes it. The few alterations I made: added cooked bacon, sauteed celery and onions and used all half and half - Thickened with dried potato flakes. Be careful if you double the recipe - it makes a lot.
