Salsa Chicken Rice Casserole

Skillet Pork Chops with Potatoes and Onion

Chops and potatoes turned out great. Onions were still a bit sharp, but not enough to dampen the overall quality of the dish.

Broiled Tilapia Parmesan

Everything was really good, and I really liked the addition of roma tomatoes to the sauce (something I'm not used to in this dish). If I do it again, I think I'll cut down the amount of chicken, though. Maybe four breast-halves instead of the full six, but I prefer a higher pasta to chicken ratio.

Apple and Orange Chicken

The chicken and sauce turned out great separately, but marinating or an alternate serving method is required. The chicken didn't take up any of the sauce's flavor as is.
