About this Cook
I work 40 hours a week and have a pretty long commute, so when I get home, I like preparing quick and easy meals that taste great. On the weekends, I enjoy baking. I love trying out new recipes on my husband. He always says I take a "customer-satisfaction survey" when we try new foods. How else would I know whether to add it to the rotation or not?
My favorite things to cook
Pasta dishes with lemon and seafood or chicken, cakes, cookies, fun desserts. I like to try to bring my favorite restaurant foods home. The Famous Chicken Francaise from this site is awesome! I also love a good casserole, that must be the southerner in me.
My favorite family cooking traditions
I can always remember making Australian Candy as a child, with my mom, or then by myself. I became the official sweet maker at my house, since I enjoyed it. Now, I try to have a big delicious meal on Sunday for my husband, since I'm always taking short-cuts on the weeknights.
My cooking triumphs
Some of my favorite foods are recipes that I came up with on my own, and I am proud of that. My honey lemon chicken is so simple and delicious, and it is my husband's favorite chicken. I came up with "mock" stir-fry, it is healthy and so easy.
My cooking tragedies
When I was a child, I made this chocolate fudge that didn't require any real chocolate, only cocoa powder. It tasted pretty nasty! As an adult, I tried cooking chicken curry a few years back. At first I burnt the onions, and had to start all over. Then, when it was complete, it was so hot, it made me cry! I then made the mistake of drinking soda instead of water to cool my mouth off, and, oh the tears. It had a good flavor though! Just too hot to eat.

Lemon-Cream Cheese Cupcakes
I made this as a two layer cake vs. cupcakes. I also added the whole eggs instead of egg whites and used fresh lemon juice for the frosting. Oh my goodness. This is my favorite summer cake from now on. I got so many compliments on this! The icing is incredible. Next time I will try adding some raspberry preserves between the layers, for a different twist. Not that it needs any improvements! Try this cake, you will love it!

S'mores Crumb Bars
These are the best! So easy and delicious. Everyone who tries them loves them. I put all of the crumb mixture in the bottom, then top with the chocolate chips and marshmallows. I store these in the fridge, we prefer them cold. Try one with a glass of milk, you'll love them too!

Orzo with Parmesan and Basil
This is one of our favorite recipes! We have an abundance of basil in the summer from our garden, and we can't eat enough of this stuff. So easy to make.
