About this Cook
I'm a stay-at-home-mom with three young sons. We are a busy family, involved in all kinds of events for school, scouts and sports. My husband and I both run businesses out of our home.
My favorite things to cook
I prefer to bake rather than assemble a real meal, but I can't serve my family only cakes and cookies! We prefer traditional, down-home kind of meals: roasts & stews, big pasta dishes like stuffed shells and lasagne, baked ham, roast chicken, meat loaf, etc. I am always looking for a new recipe to revamp an old favorite, but we are not big into exotic, ethnic or experimental dishes.
My favorite family cooking traditions
A few days before Christmas, we go on a cooking & baking marathon. I don't like to cook on Christmas itself (prefer to relax) so we make up dozens & dozens of cookies, side dishes, throw a ham in the crock pot, make a roast and bake a chicken, etc. It's become a tradition and even the boys get involved.
My cooking triumphs
Some years ago, my idea of cooking was to throw a TV dinner in the microwave. A husband and three kids later and that was no longer feasible. So *any* cooking is a triumph for me! I sat down and taught myself, scoured hundreds of books and websites, and now as long as I have a recipe, I can make it!
My cooking tragedies
From my very early days: Do not add 'just a little bit' of milk to sticky melting chocolate in a sauce pan to make it melt faster/ become creamier.

Cheese Quesadillas
This is a quick recipe that is really easy to add your own twist to. I liked that it is broiled rather than fried. I've used it as a appetizer and even a side dish in a pinch. I cut the salsa amount down a lot because 1/2 cup makes it a bit too 'mushy' for us.

Slow Cooker Porcupine Meatballs With Peppers
These were very good- sauce kept the meatballs moist with a nice flavor. I did add an extra egg to the meat mixture for two reasons: I was using medium-sized eggs and my porcupines always fall apart. I'm happy to say that with careful turning they were perfect! The only thing I did different with the method, I put some of the sauce in the slow cooker, then added the porcupines, then the rest of the sauce. This was so I wouldn't have to turn or stir them so much.

Bubble Pizza
Very good, a quick & fairly easy change of pace from regular pizza. The only change I made was to use sausage instead of hamburger, and I cut it down to 1/2 a pound (didn't want to use a lot in case it didn't turn out). 2 out of my 3 kids liked the biscuit crust, which is about the best I can hope for!
