Delicious, healthy low cost recipe, thank you for posting it! I made 1/2 the recipe. I used one whole egg, am out of honey so increased the apple sauce, I used xylitol for the sugar and added some raisens and dried berries. My cookie sheet is hiding from me at the moment, so I cooked it as a bar cookie in a 9 x 9 inch pan for about 30 minutes at 325 degrees (had to be very careful with edges burning) It is a bit crumbly for eating on the run, so may make cookies next time. I am glad that I found this recipe, it even has some protein in it!

Excellent. When I got blueberries on sale for $1, I knew what I wanted to make and found this wonderful recipe. I added more milk, sugar substitute and vanilla as suggested. Tried a few variations - added lemon zest to one and a bit of oatmeal to one - did not care for either. Also added some pureed cottage cheese in place of some of the milk (in my effort to get enough protein in my diet) and that did not make much difference in the pancakes, a bit moister. Thank you for posting this, it is the best no oil added pancake I have ever had!

The recipe turned out wonderful even with my substitutions and additions! I had a lot of leftovers and they worked perfectly. I used mexican squash instead of zuccini and added onion, garlic and spinach. I used blended cottage cheese instead of the ricotta and part sharp cheddar with the mozzerella. I used no-fat evaportated milk instead of the half and half. It is so good, I am glad I planted squash in the garden! Thank you for the recipe and all those who made suggestions.
