Just me
About this Cook
I live out in the country with my 5 rescued cats; a self-proclaimed crazy cat lady. I would love to find some cat food recipes, as they are finicky, and I worry about the quality of commercial cat food.
My favorite things to cook
Baking is my specialty.
My favorite family cooking traditions
Sunday dinners were always the highlight of the week when I was young. We could always count on something extra yummy, like a tender roast with baked potatoes and sweet, buttered carrots or some other fresh vegetable from our garden. It was also the only day of the week we got dessert.
My cooking triumphs
My first "fancy" cake, a clown cake for my sons first birthday. I had never used a pastry bag before, and I was surprised how professional-looking it turned out.
My cooking tragedies
So far, I've been very lucky, knock on wood!!

Crazy Cake
I misplaced my crazy cake recipe that I'd used for years, so was very pleased to find this one. My recipe was for a single layer in an 8X8 pan, and this is very close to it, if I halved the ingredients. The only difference I see is that my recipe called for 3 tablespoons cocoa & 6 tablespoons oil. Otherwise, this recipe appears to be exactly doubled. I love this cake, which is so moist, I never felt the need for any kind of frosting, just occasionally would put a dollop of whipped cream on top. It's so easy to whip up, right in the pan. I always this when I'm having a chocolate craving, and it satisfies it perfectly!
