Addictive Pumpkin Muffins
Yum! I made these using fresh pumpkin puree and they're delicious and moist - exactly the recipe I was looking for. Aside from cutting the recipe in half, I made a few changes: 1) Used half white/half brown sugar and cut down the amount slightly 2) Didn't have cloves, so instead I grated in about 1 tspn fresh ginger and some extra cinnamon 3) Sprinkled a bit of cinnamon/sugar mixture on top of the muffins before baking I think next time I'll try dried apples instead of raisins, as I think they'd really complement the flavors well!

Smoky Chipotle Hummus
Awesome! I've been trying lots of hummus recipes and this is the best so far. I didn't have roasted red peppers so omitted that and added extra sun dried tomatoes. The result was still delicious. Smooth and creamy; the lemon juice and cilantro are a great balance to the chipotle.

Hot Artichoke and Spinach Dip II
This was very tasty and a hit at my Super Bowl party, served with tortilla chips - but I felt like it was missing something - maybe next time I'll try adding chili powder like another reviewer suggested. I used vegan cream cheese to cut down on the dairy, and it worked great; I think next time I'll try it with extra garlic and artichokes as I LOVE artichokes! Oh, should point out that like others, I also used sour cream instead of mayo.
