Spicy Melted Cheese Dip

Reviewed: Dec. 15, 2009
I love this dip! My mom made this all the time when i was growing up, and now I make it as an appetizer for super bowl parties. I use 1 lb of beef and leave out the sausage. For spicier dip use a can of HOT tomatoes with green chiles, or use mexican style processed cheese.

Merenges

Reviewed: Dec. 15, 2009
These turned out fantastic!! The guests were raving about my homemade meringues. I added two more egg whites and increased the sugar to 1 1/2 c. Instead of lemon zest I split my meringue in half and added 1 t of lemon extract to one half, and 1 t rum extract to the other. Also added food coloring. I filled each half into 2 separate pastry bags fitted with star tips to make swirly meringues, and baked for 1 hour at 250, then turned off the oven and left them in it with the door slightly open for another hour so they came out crispy. Very yummy melt in your mouth meringues!

Kentucky Hot Brown

Reviewed: Dec. 15, 2009
I wanted to try this cause it looks good and its something different. I thought it was OK.. It tasted pretty bland to me... actually it tasted a little floury. I think it needs more flavor. I didn't add the bacon cause i didnt have any, maybe that would have made it better. Next time i'll try a different recipe.

Perfect Pumpkin Pie

Reviewed: Dec. 10, 2009
I love pumpkin pie and I make it all the time. Out of the dozens of recipes I've tried this one knocks them all out. It was so easy to make since it uses sweetened condensed milk instead of evaporated milk and sugar. I followed the recipe exactly although I do like my pie spicy so I did add a little extra nutmeg and also added cloves, and also topped it with a brown sugar streusal, It tasted great! It also had a wonderful, creamy texture. This one's a keeper for sure!

Bacon Crackers

Reviewed: Dec. 4, 2009
My variation: Club crackers sprinkled generously with parmesan, wrap in bacon. Bake 1 hour at 250 on rack placed on baking sheet so bacon drippings can fall. These are so good. I serve them as appetizers at parties.

This pie was so easy to make and it turned out so good!! 4 stars because I substituted cream of potato soup, and used less milk so the filling would be thicker. YUMMY!

I've never had yorkshire pudding before, and this was my first attempt at making them. I used one less egg than the recipe says and they turned out great! They puffed up great and I thought they tasted like fried scones so I dusted them with powedered sugar and ate them with honey butter. YUM :)

Brown Sugar Bacon Waffles

Reviewed: Aug. 18, 2009
What a great twist on waffles. These are actually belgian waffles and they puff up A LOT! I'd recommend using a belgian waffle maker. I used a regular waffle iron and had to be sure not to shut it all the way or the batter would spill out, even with less batter used. I found that if I held it almost shut, but not completely, that the batter fluffs up so much it'll still reach the top of the iron to cook. You can also freeze leftovers in sealable bags. Just stick them in the oven at 250 degrees just til warmed. Great recipe! I even made extra bacon and ate it alone! If you're looking for a strong bacon flavor I suggest using more than what the recipe calls for.
