Drop Biscuits and Gravy

Super simple. I raised the servings to 6 for the gravy to account for the 12 oz of sausage I had on hand and it turned out to be the perfect amount to cover the original biscuit amount.

Bacon Cheese Frittata

This was an excellent dinner that the whole family enjoyed. I thought that six eggs would not be enough, so I brought the recipe up to 10 servings and it was the perfect amount for a 9x13 cooked for 35 minutes. I mixed a little ham into the egg mixture before putting cheese and bacon on top and it was a little salty. We are thinking that adding some diced tomato will help next time. We actually brainstormed as a family the items that we would like to have in it the next time (spinach, black beans, a layer of mashed or shredded potatoes on the bottom, feta...)

Cheesy Catfish

I should have spent more time looking at other people's reviews before cooking. 15 minutes at 350 was not nearly enough time to cook thought the catfish. I did add breadcrumbs instead of some flour though and that added a great crunch.
