I am a 34 year old mother of a 4 year old boy. I really like to cook as long as Garrett stays out of the kitchen. It gets harder and harder to prepare wonderful dishes in between finding Power Rangers on TV and playing swords. I have also been a Type 1 Diabetic for 31 years and that always adds an extra challenge to meal preparation.
My favorite things to cook
Grandma's Meatloaf, Chicken Rice Soup, casseroles, beer chicken, crock pot chicken, anything in my crock pot! My mom has a great Peach Cobbler recipe that I love to make, and I make a fabulous banana bread and pecan pie. Oh, and I love to make stuffed bell peppers.
My favorite family cooking traditions
My Grandma has a Pennsylvania Dutch recipe for a dish called Chicken Pot Pie. It is not like the southern version but more like a chicken and dumpling dish. Instead of the dough being in balls, it is rolled out on a flour surface and cut in squares. It is boiled with chicken and slices of potatoes and parsley. Soooooo good!
My cooking tragedies
The above Peach Cobbler recipe I accidently made with all purpose flour instead of self rising. Needless to say, there was NO rising. I am sure I have goofed something else up and when I think of it, I will post.
