Baingan Bharta (Eggplant Curry)

This was great. Cooked eggplant for 20 minutes. Did not peel. Scored it like a mango and push the flesh out...then cut the chunks off like you would a mango.

Great standby recipe to get away from buying the convenience packaged option. Had everything on had to make. Next time I will reduce the garlic salt as this was very salty.

Eggplant Parmesan II

I scaled this recipe to 3 servings which got me down to one eggplant. I cooked the eggplant in a 400 degree oven for 7 minutes per side. I did the eggplant the night before and just stored it in a plastic bag in the fridge until I was ready to layer it with the sauce and cheese. Very good and easy Eggplant Parmesan recipe. Even my 21 month old ate it!

Quick and Easy Chicken Noodle Soup

Really good, quick, chicken noodle soup recipe. I cut up some raw chicken tenders and put them right in the pot once the veggies had their chance to cook. The boil and simmer cooks the chicken right up, so this was a time saver and less dishes to wash. I also added some garlic powder to the mix.

Beef and Bean Chimichangas

I added the refried beans right in with the meat. The jar of taco sauce I bought was only 1 cup so I improvised with 1/4 C of salsa and 3/4 C of spaghetti sauce. Very good. My husband, 18-month-old, and I all ate it right up.

Bolognese Stuffed Bell Peppers

Really good. My husband, 14-month son and I both ate it up! I skipped the red wine b/c we were out. I added garlic and onion with the carrots and celery. This is a keeper. Filled 4 big peppers wonderfully.

Broiled Tilapia Parmesan

Very good. I took another suggestion and added about 2 T breadcrumbs to the mixture (I was only making a 1/2 recipe.) I also subsituted sweet white wine for the lemon juice b/c I didn't have lemon juice.

Easy Honey Mustard Mozzarella Chicken
