Ham 'n' Cheese Egg Bake
Made this the evening before my boyfriend's birthday when I knew we'd have a dozen people crashing on our floor. They were pleasantly surprised to have real food in the morning for hangover breakfast. It was a big hit!

Vegetarian Kale Soup
I was amazed that I could make something so good! Omitted the oil altogether and sauteed in cooking spray so it was virtually fat free, and still delicious! I will be making again (as soon as I eat my way through the stockpile that has taken over my freezer).
