Broccoli with Garlic Butter and Cashews
Wow! Did I forget to say WOW? I never thought Broccoli could taste so good! My 4 year-old asked for seconds-with that I tell you everything. I didn't have any cashews so I omited. I simmered for about 4-5 minutes.

Sukhothai Pad Thai
This recipe was almost restaurant quality. In fact it was better than some restaurants. I used chicken. I substituted the paprika with cayenne pepper. It was nice and spicy. I also added some fish sauce (2 Tbs). I didn't have fresh tamarindo so I used the candy tamarindo that they sell in the mexican spice section. Since I added the sweet tamarindo I omitted the second sugar part of adding sugar at the end again. I didn't use the pepper flakes since I had put Cayenne. I also omitted the radish since I didn't have any. I garnished with Cilantro.

Becki's Oven Barbecue Chicken
I cut down on the ketchup. Didn't have mustard so I put vinegar. Covered with foil for first 40 minutes and remaining 15 minutes uncovered. Also, the butcher gave me wings without the tip and part of the wing that somehow became little drumsticks. It was Delicious! Wish I would have made more for lunch tomorrow.
