Nutty fruitcake:  1 Yellow butter cake mix:1 stick butter softened 3 eggs  2/3 water(I used the juice from 1 can of fruit, why waste it?) 1 can each.16oz?(reg size) peaches, mandarin oranges mix together and divide between 2 cake pans  that have been sprayed with Pam. &n MORE

I'm in my middle 40's. I have a loving husband that I have been with for 19 years and counting! I also have 3 wonderful children. They are all teenagers! Two are driving...(wheesh)!!! We have 3 dogs and we all love them...9-23-09 Update: I am a substitute lunch lady for the school distr. in town too!
My favorite things to cook
I Love to BBQ and Grill and the family seems to love it as much as I do! :] I pretty much cook everything. I love to try new things... Like out of cookbooks and such, although some do fail miserably! i keep trying anyway.
My favorite family cooking traditions
Thanksgiving Dinner. Which always includes oyster stuffing (delicious) I ONLY make it at Thanksgiving. My family recommends it. I make mashed potatoes that my mother-in-law taught me, and she's been making them that way for YEARS! They are delectable! :D
My cooking triumphs
I could say that my green chicken enchiladas never fail. They are pretty triumphant. hahaha
My cooking tragedies
There have been some downers, and heartaches. I really can't name them all but one was one that I found in a cooking mag. that my family HATED. I will never do it again... but I can't seem to remember what it was... and I don't think I want to!!! I make a mean grilled pizza and am working on my bread making skills thanks to this site! I am forever addicted to the people and recipes on here! OXOXO ):

Minted Salmon
I am giving this fish a 4 on account of the family really did not care for it but I did.The mint was not very prominent, I added 2 bunches of fresh mint for 2 1/2 lbs of fish. I used cilantro instead of the parsley. It was easy and quick. I tought it tasted really good! Thanks for an interesting take on salmon!

True Blue Custard Crunch Pie
I loved this pie! I added a layer of rolled out almond paste to the raw pie dough before I filled it. This was the ticket to a yummier pie! I did have to bake it longer then it stated as well. I added crushed toasted almonds instead of the pecans and it was delish!! A scoop of vanilla and this is a real winner! MMM Fabulous:) Thank You Nonnie

Cindy's Awesome Clam Chowder
Holy guacamole, my craving has been quenched! This chowder was just Terrific! I did add chopped onion. That was only thing I changed. Very flavorful, the ff half and half was just the ticket, save some calories but did not sacrifice the flavor. My kind of chowder! I served it with sour dough bread. Thanks for this delish dish Cindy!!
