I have the hardest time cooking vegetables just the right amount and knowing how long to grill something. Hopefully as I go through my courses for school in my food preparation classes I will figure this out more :-)

Chicken Parmigiana
I'm always looking for recipes for 2 considering I usually only cook for my boyfriend and myself. This was a great find. I have made this many times since first finding it and I always look forward to eating it. For a side dish, I would recommend sticking to vegetables or maybe a small portion of wheat pasta and vegetable in order to have a healthy dinner :-)

Baked French Fries I
Just the recipe that I was looking for! Instead of having the high calorie and high fat french fries that come from burger joints, this provides a delicious side for burgers and sloppy joes. It has a great amount of seasoning and tastes similar to curly fries at Jack in the Box without the guilt of consuming fried foods.
