Broccoli Casserole II

I followed the recipe with a couple of exceptions: 8 oz. Velveeta for the cheez whiz, I used fresh broccoli since that's what I had on hand, and I added 1/4 cup half and half before baking because it seemed a little dry. Really good. Will probably make again.

Raspberry Almond Coffeecake

This was really delicious! Fresh raspberries are a must, in my opinion. I followed the recipe as is and thought there was enough batter for an 8 inch pan. There were certainly raspberries peeking through the top but it looks pretty that way with the almonds and the glaze on top.

Basic Crepes

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

This was fantastic! The topping was delicious along with the smoke from the cedar plank. I soaked mine for 2 hours and didn't have any problems with it catching fire. It did buckle a little and the bottom got charred but the salmon cooked beautifully. The lemon zest is much more flavorful than simply using lemon juice. Delicious!

Barbequed Ribs

We really enjoyed these ribs. The cooking method takes awhile, but it creates a very moist and tender rib. I would reduce the amount of chile powder next time as the flavor was a little strong. The sauce was delicious. I added 2 T. molasses to give it a little more sweetness.

Microwave Lemon Curd

This is amazing stuff! I followed the recipe exactly and it came out very well. I microwaved for about 6 minutes, stirring after each minute. This was delicious on blueberry muffins. I also used it as a filling for lemon cupcakes.

Old Fashioned Coconut Cream Pie

This was fantastic! I followed the advice of other reviewers and used 1.5 cups coconut milk for part of the half and half and used 1/3 c. cornstarch in place of the flour. I did this in the microwave and it came out beautifully. I used quite a bit more whipped topping than called for. I also toasted just the coconut that went on top. Thanks for a wonderful recipe!

Garlic Roasted Chicken

Mmmmm, this was delicious. So easy to prepare, too! I made the gravy with apple juice and added a little extra chicken broth. It was delicious over the chicken. I increased the cooking time 20 minutes to get the chicken to the correct internal temperature but my chicken was just over 4 lbs.

Smothered Green Beans

I loved these green beans. They seem so comforting with all that bacon and onion. I used pre-cooked bacon and just browned it with the onions in a little bit of oil. I cooked mine for about 30 minutes to get to the texture that I like.

Chicken Pesto Pizza

This was really delicious. I used homemade pesto and homemade pizza crust. I couldn't find fontina so I used an Italian blend of shredded cheeses. This would also be good with mushrooms and onions or pine nuts added.

Sausage Balls

These are fantastic. I served them at a bridal shower several months ago. It takes awhile to get the mixture to combine but I think it's helpful to a Kitchenaid with the dough hook attachment. I like these best with Jimmy Dean HOT sausage. They freeze well (uncooked) also.

Mexican Cream Cheese Rollups

These are very good althought I add 8 oz. shredded cheddar or Mexican blend cheese to the cream cheese mixture. I like to use sun-dried tomato tortillas and spinach tortillas to give them a pretty color.

Grilled Lemon Herb Pork Chops

These were very good. I marinated for about 3 hours and then grilled. I felt weird about using leftover marinade (even after being boiled down) as a sauce so I just left that part out. There was plenty of flavor from the marinating.

Strawberry Panna Cottas

This was good for a light, tasty dessert. I poured the gelatin mixture into miniature flower cake molds. Unfortunately it wasn't firm enough to hold the shape very well when I unmolded them. Next time I'll use a ramekin or IMVINTAGE's suggestion of using a martini glass. I used one bag of frozen strawberries because the fresh ones weren't very ripe. I also used sugar instead of Splenda and it tasted great.

Easy and Elegant Pork Tenderloin

This was a very tasty way to cook pork tenderloin. I coated the pork with olive oil, salt, pepper, and garlic pepper in a ziplock bag. Then I dumped in the bread crumbs and shook the bag until the pork was well-coated. I placed on a foil-lined pan and baked as directed. When it was done, there was a nice crust on the pork and I didn't have to clean a pan...I just threw out the foil. Next time I'll add some grated parmesan to the bread crumbs.

Almond-Topped Fish

I thought this was really good as is but hubby didn't like the almonds on his. That was easy enough to fix! I used light mayo instead of fat-free because that's what I had on hand and I used freshly grated parmesan. This was really good on cod.

Chicken Broth in a Slow Cooker

I really like this method for making broth. It was very flavorful and YOU get to control how much salt is in it. I bought a 5 pound chicken, cut up, and divided it between two slow cookers to make a double batch. I used half to make soup and froze the other half. I froze the chicken meat to use later in a soup or casserole.

April's Chicken Fried Rice

This was a good, basic chicken fried rice. Very comforting. The eggs really help to hold everything together. Next time I might add bean sprouts or water chestnuts for a little crunch.

Quick and Easy Pizza Crust

This was very good and so easy to make. I followed the recipe exactly and had no problems. It made enough to fill a large rectangular pizza stone for a thick crust pizza.
