Grilled Pineapple Slices

This was absolutely delicious. I soaked the pineapple slices (cut fairly thick-I got 7 slices from one pineapple) in coconut milk before placing on the grill. Then I sprinkled with the cinnamon sugar. I served this with vanilla bean ice cream and a sprinkle of nutmeg on top. The smokey taste from the grill tasted so good with the tangy pineapple and sweet cinnamon. I'll definitely make this again. My husband declared it the best pineapple he's ever eaten!

Rosemary Ranch Chicken Kabobs

I love this recipe and have made it several times. The only change I make is to cut back the oil to 1/4 cup. The longer you marinate this, the better. This is good on skewers like the recipe suggests but I've also used the marinade on boneless skinless chicken breasts.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

This was amazing! I used a pork loin roast rather than a tenderloin and it came out very tender. I served it with Cilantro Lime rice and it reminded me so much of a burrito bowl from Chipotle. I will definitely make this again.

These were wonderful. I refrigerated my dough over night and it rolled beautifully the next day. These were good with either buttercream icing or royal icing.

Avocado-Corn Salad with Creamy Salsa Dressing

This was a fabulous salad. I made sure to drain my salsa and added a spoonful of sour cream (per other reviews) to the dressing. It wasn't soggy at all. I used corn chips for the top. This was a gorgeous salad and would be great for a summer potluck.

Baked Kale Chips

I was skeptical about these, thinking they would be soggy, but I was pleasantly suprised! I followed the directions and just eyeballed the salt. I will definitely add less salt next time because once the kale shrunk up, it was too salty. I still enjoyed it, though, especially with a squirt of lemon juice and a sprinkle of parmesan. I'll definitely make this crunchy treat again!

Prosciutto Wrapped Asparagus

Fantastic!!! I followed the advice of several other reviewers who recommended chive and onion-flavored cream cheese. I also blanched the asparagus for one minute before rolling. I don't know if that was necessary, as the proscuitto probably could have cooked longer before becoming too crispy. I will definitely make this again. It was a perfect side for our Valentine's meal of Broiled Scallops and Cheesy Polenta (both from this site).

Chicken Tetrazzini IV

This was delicious, with a few minor changes. I substituted Almond milk for the heavy cream to make it a bit lighter. I also used fresh mushrooms and omitted the sherry. I was concerned that it would be kind of bland, but the pepper and parmesan flavor it nicely, without it being too strong. I'll probably make this again, possibly using rotisserie chicken for convenience.

Pumpkin Crumb Cake

This was a nice alternative to pumpkin pie. The crust was definitely thick enough, so I would recommend using a 9x13 pan as the recipe calls for. I think it would be good with the filling doubled, though it was fine as is. Definitely add some whipped cream to the top!

Caramel Popcorn

This was so great and a lot easier than I thought it would be. I followed the advice of other reviewers and reduced the butter by half. It tasted just fine that way, so why not save the calories? I baked for the full hour and it was just right: not sticky but not overdone. I highly recommend this. It was my first time making caramel corn and I'll definitely be making it again, maybe with some pecans added.

Broccoli Casserole II

I followed the recipe with a couple of exceptions: 8 oz. Velveeta for the cheez whiz, I used fresh broccoli since that's what I had on hand, and I added 1/4 cup half and half before baking because it seemed a little dry. Really good. Will probably make again.

Raspberry Almond Coffeecake

This was really delicious! Fresh raspberries are a must, in my opinion. I followed the recipe as is and thought there was enough batter for an 8 inch pan. There were certainly raspberries peeking through the top but it looks pretty that way with the almonds and the glaze on top.

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

This was fantastic! The topping was delicious along with the smoke from the cedar plank. I soaked mine for 2 hours and didn't have any problems with it catching fire. It did buckle a little and the bottom got charred but the salmon cooked beautifully. The lemon zest is much more flavorful than simply using lemon juice. Delicious!

Barbequed Ribs

We really enjoyed these ribs. The cooking method takes awhile, but it creates a very moist and tender rib. I would reduce the amount of chile powder next time as the flavor was a little strong. The sauce was delicious. I added 2 T. molasses to give it a little more sweetness.

Microwave Lemon Curd

This is amazing stuff! I followed the recipe exactly and it came out very well. I microwaved for about 6 minutes, stirring after each minute. This was delicious on blueberry muffins. I also used it as a filling for lemon cupcakes.

Old Fashioned Coconut Cream Pie

This was fantastic! I followed the advice of other reviewers and used 1.5 cups coconut milk for part of the half and half and used 1/3 c. cornstarch in place of the flour. I did this in the microwave and it came out beautifully. I used quite a bit more whipped topping than called for. I also toasted just the coconut that went on top. Thanks for a wonderful recipe!

Garlic Roasted Chicken

Mmmmm, this was delicious. So easy to prepare, too! I made the gravy with apple juice and added a little extra chicken broth. It was delicious over the chicken. I increased the cooking time 20 minutes to get the chicken to the correct internal temperature but my chicken was just over 4 lbs.

Smothered Green Beans

I loved these green beans. They seem so comforting with all that bacon and onion. I used pre-cooked bacon and just browned it with the onions in a little bit of oil. I cooked mine for about 30 minutes to get to the texture that I like.

Chicken Pesto Pizza

This was really delicious. I used homemade pesto and homemade pizza crust. I couldn't find fontina so I used an Italian blend of shredded cheeses. This would also be good with mushrooms and onions or pine nuts added.
