These were delicious -- the feta made the burgers really juicy and delicious. My only edit was that instead of putting the salt and pepper in the burger mix, I sprinkled salt and pepper on the top and bottom of the burgers before putting them on the grill. This way, the burgers were a little crispy on the outside and melty on the inside. Yum!

I love the idea for these burgers and I was super excited to make them. You just have to watch out how you cook the eggplant -- it's a very watery vegetable and becomes mushy VERY easily in the microwave. If I make these again, I will put the eggplant directly on the stove after cutting and peeling it.

I used this recipe to make cut-out sugar cookies for christmas gifts -- I made christmas "trees" from them. I used decreasing sizes of star-shaped cookie cutters, frosted the cookies with green buttercream icing, then stacked the cookies from largest to smallest, slightly rotating each star to look like boughs of a christmas tree. Admittedly not my idea, but the cookies were a huge hit and loved by all! Is now my "default" recipe for sugar cookies.
