Sweet Corn Tomalito
I used the readers suggestion and cooked mine in the microwave. The center didn't want to 'firm up' and I ended up having to stir it. Then it was almost over cooked. Also I put a diced and seeded jalapeno in the mix. Not sure I'll make this one again.

Winter Fruit Salad with Lemon Poppyseed Dressing
How do you say winner! A friend made this and put some fresh sliced strawberries in it. Any kind of nuts works: pecans, walnuts or toasted sliced almonds. (I know strawberries aren't a winter fruit)!

Southern as You Can Get Collard Greens
I be lovin' me some greens! I had to learn how to cook collards cuz they're NOT like others that cook up quickly. I also put in some chopped onion and Tabasco sauce. (Diced up smoked sausage rocks as well). They'll cook up quickly in a pressure cooker in 10 minutes.
