I married my high school sweetheart after 7 years of dating and currently bought our first house last year. I work for a health research consulting group and enjoy cooking, entertaining, eating, reading, watching movies, working out, photography, traveling, and playing with my persian kitty Macchi.
My favorite things to cook
Anything flavorful and vegetarian. Open minded to all types of cuisine. I especially am partial to Thai.
My cooking tragedies
Made a homemade apple pie for Thanksgiving one year but instead of adding sugar I used salt. Let's just say that pie was one never to be forgotten. :)

Panzanella Panini
Can't go wrong with simple, fresh, and tasty! I've been a fan of panini's for years. I do make the following modifications on this recipe...Instead of using olive oil I lightly spray the bread with olive oil flavored cooking spray (tastes just the same but without the fat), add sliced red and green peppers to the sandwich along with yellow onion, and crushed red pepper flakes. You can even add sliced mushrooms as well. Thanks for sharing the recipe, delicious!

Pineapple Angel Food Cake I
Very healthy, easy, and flavorful recipe! I made the following modifications...I added a can of mandarin oranges to the mix along with the crushed pineapple. I used a 9 x 13 pan (sprayed with Pam) instead of the bundt and had no problems with it falling, however I left the cake in for 35 minutes. I let the cake cool upside down on a cooling rack. Along with fellow reviewers I added crushed pineapple to the cool whip along with a few drops of yellow food coloring. Very simple and great tasting recipe, thanks so much for sharing it!

Corn Dog Muffins
These little muffins were very tasty and also quite filling!! Very easy recipe. I did make a few modifications...I omitted the brown sugar completely, but used honey flavored corn bread mix. I also added 1/4 of a chopped jalapeno to add just a kick of spice. I am vegetarian, so I substituted veggie hot dogs and worked out perfectly. Served with ketchup and mustard. Easy, quick, healthy, and yummy meal! Thanks for sharing this recipe.
