Rempel Family Meatloaf
I have always hated meatloaf, but my guy brags about his moms cooking, especially her meatloaf, so I decided to attempt it for him. In the 3 years I've been cooking for him, this was the first time he's ever said "Just like my mom made!" I'm now a meatloaf fan also, guess I've just never had a good one before. This recipe was perfect as is, I wouldn't alter it a bit. Mashed potatoes with beef gravy and green beans made it a delicious classic home cooked meal!

Hummus III
MMM, hummus! I got sick of buying those tiny tubs for large prices. Home made is where it's at! So far, I have only used dried garbanzo beans, which take forever to soak and cook. The first time, I didn't cook them long enough and the hummus turned out grainy and chunky, yuck. The second time was perfect! I added roasted garlic, and had a huge batch of home cooked hummus for about...$2-$3? With baby carrots and pita bread, it was a delicious and healthy snack. I am trying it next time with canned beans to determine if the easier way tastes just as good. Either way, this recipe is the keeper for me!

Sour Cream Coffee Cake III
I too put this a 9x9 pan, but otherwise followed the recipe as written. It was indeed a very good coffee cake, but similar to many I've made. I tried it again with blueberries, that perked it up a bit. I made one years ago that was THE BEST EVER, which I can't find the recipe for. This was not the mother of all coffee cakes, so I will still be testing out others.
