Roasted Sweet Potatoes & Onions
Ok, this is the absolute best way to have sweet potatoes. I made a pretty big batch. It filled up two cookie sheets. I didn't have the amaretto so I added a 4 Tbls. of orange juice. I also added about 3 Tbls. of brown sugar. I didn't have any thyme so I used 3-4 tsps. of a no salt seasoning that has thyme in it (along with a whole bunch of other seasonings and black pepper.) I sprayed the pans and then sprayed the top of the sweet potatoes after I put them down. It was SO YUMMY! My husband and I loved it! My dad loved it too and he didn't think he would. He doesn't like really sweet sweet potato dishes. I've already bought more sweet potatoes so I can make it again. I'm definitely going to make it for thanksgiving. Next time I'll cut the potatoes a bit bigger so they can roast for longer.

Golden Sweet Cornbread
This is a really great cornbread. I grew up eating savory cornbread but my husband likes sweet so I tried this and we love it! I made a double batch but I left the sugar the same. I added 3 packets of powdered stevia for some extra sweet without the calories. I also added an 8 oz can of cream style corn and I reduced the oil to 2 tablespoons. I thought it was perfect but my hubby thought it could have been a touch sweeter. Next time I'll probably add a bit more sugar.
