My favorite things to cook
There are alot of great reasons to live in FL. One of them is the abundance of fresh fish. At home, and when we go out to eat, I will order fish 99% of the time in a reastaurant. I also bake alot of chicken tenders and put over a salad.
My cooking triumphs
AS mentiones above, a great summer salad is baby butter lettuce, sliced strawberries, sliced cucs, sliced red onion, with baked chicken on top. I prefer to slice the chicken right out of the oven. An easy and lite way to bake it is with lemon juice, a small pat of "cant believe its not butter LIGHT" and toped off with some Montreal Chicken seasioning! What a great meal. Any kind of lite salad dressing but we really enjoy Kens Steak House Lite Walnut Vineregrette! YUM!

Tarragon Lover's Scallops
3 letters. OMG! What an amazing mix of flavors. With both tarragon and lemon zest, (2 of my fav flavors, but never combined) its like a party on your taste buds! I used 'I cant blve its not butter light' and was still...OMG! I didnt whipe out the pan eiter. Thank you for such an alive recipe. This is at the top of my recipe box.

Lemon Cream Pasta with Chicken
This was wonderful! I added a bit of dill (one of my favs) and a hint of heat with cyanne pepper. Also, instead of cream, I added 1/2 and 1/2 with bit of flavored cream. I used Coffee Mate's Italian Sweet Cream, but just a bit. All of thoes flavors are quiet potent. Excellent rec. Thanks. This is a keeper! I text'd my b friend and told him I will be making this soon!

Key West-Style Baked Grouper
I followed this recipie to a T and to be honest, we found it to be a bit bland. All we could taste was a hint of lime. I went over the recipe again, to make sure I didnt miss anything but..........it was all in there. The next time I made Grouper was last week. I had my Mom over for lunch. I baked it in lemon juice, Cant believe its not butter lite, and some fish seasoning. Baked it for 25 min, and when it was done, I placed a home made fruit salad on top, warmed up!! IT was a combo of black plums, oranges, apples, strawberries, and peaches. Served with french green beans with garlic butter, and sliced almonds. Wonderful!!
