Baked Omelet
Made twice. First time exactly as written. 2nd time used sausage instead of ham, and added more seasonings. A good starter recipe, then add your own flair.

Pineapple Coconut Zucchini Bread
Really liked this. Made it in a cake pan b/c of others saying it was mushy... This seemed to help, but it still took longer to bake, but worth it.
