Yummy. I thought I could have used more pumpkin though. I substituted apple cider for the wine and it turned out great.

Gingered Mango Salsa

Fabulous. Thanks Barb. I doubled the ginger as another reviewer suggested and doubled the mango. It was so good. I took an empty bowl home from the church fiesta night.

Avocado, Tomato and Mango Salsa

I just won the salsa cook off at our church with this. I doubled the avocado and jalapenos but otherwise left it the same. I was easy and fabulous. Thanks!

Ham Potato Puffs

These were a great comfort food and a super way to use up leftovers. I chopped my ham into little pieces and mixed all the cheese in the potato mixture. My mashed potatoes were actually mashed potatoes and carrots. My boys 8 and 15 love them that way, You just cook carrots and potatoes cut the same size in the water than mash as usual. Delicious and better for you. The carrots in the mashed potatoes tasted great in this recipe.

Chocolate Ganache

So easy. As you mix the ganache, first it looks like it isn't going to combine but after just a little while perfection! I helped some non-cooking 14 year olds make this as the topping for a cake project for school. An A project!

Fudge Truffle Cheesecake

My family and scrapbooking group loved it. It is creamy and chocolately. What more could you want. Tastes great with a graham cracker crust too.
