Favorite Banana Blueberry Quick Bread

Very yummy, made 3 2" high loaves which I froze. That way it's less of a temptation for hubby & I to finish off one large loaf over a weekend! Added a little cinnamon & vanilla as prev. reviewers suggested, used fresh picked blueberries. Looking forward to making it this winter whenever I have overripe bananas in the house, and my frozen fresh-picked blueberries in the freezer!

Aunt Blanche's Blueberry Muffins

Nice recipe because dough had enough butter in it that blueberries didn't sink to bottom like some recipes. Doubled and made 2 doz (regular size paper cupcake liners). Easy, tasty, not too dry - added vanilla, replaced sugar with 1/2 Splenda, used 1 less egg, fresh fat blueberries.

Light Oat Bread

I am giving this bread 5 stars due to its simplicity and excellent results. I followed the recipe exactly after reading the other reviews, but did have to add additional flour each time I made it. Would hesitate to change the recipe though because breadmaking is different on different days. Used the dough cycle, split finished dough into 2, shaped into loaves, in 2 aluminum bread pans about the size of loaf pans, and raised them by turning oven to 150, then turning it off, raising for about 30 min. Baked at 375 for 30 min. starting from the slightly-warmed oven. Browned and sliced like a dream, toasted well, delish!

Cherry Enchiladas

Made this exactly as written for Valentine's Day dessert. Was pleasantly surprised when it turned out well and my guests really liked it. (I was afraid it would be too "gooky-sweet"). One thing tho - use an 8"X8" pan, not 13 X 9!

Quick Cassoulet

Have made this twice. Good basic time-saver recipe, but looked too dry and tasted bland, so added 1 can chicken broth, 1/2 cup dry red wine, and 1/2 tsp. crushed red pepper flakes and simmered it about 2 hours. Mashed the beans a bit before serving to thicken. Turned out tasty. We like a little more "zip" so 2nd time added same extras, but used hot links smoked sausage and omitted the red pepper flakes. Even better!!

Mango Salsa

Very good basic recipe. I ramped it up with the addition of a nectarine, used sweet Vidalia onion instead of green onions, and used canned jalapenos rather than fresh, added 1/2 tsp. salt, grated some fresh gingerroot. It got raves from my guests and my non-fruit salsa-lovin hubby!

Chicken Jalfrezi

Just now enjoying the leftovers of this savory chicken curry. I made this exactly as written, but used chicken breasts (on hand). My husband enjoyed it as well. If you like Mexican food, or Oriental food, you will enjoy this as well.

Easy Cream Cheese Danish

Coconut Cream Pie I

Easy and a real winner! My store didn't have the right size - had to use 2 small vanilla puddings, added the coconut to them, and toasted it for the top. Used Cool Whip Lite since it was all I had, still turned out great and got raves and recipe requests. This forum is the best to exchange recipes and ideas!

Beef, Green Chili and Tomato Stew

Excellent dish! I made this according to directions, even tho i was a little short on beef. To give it substance, I served it over homemade corn tortilla chips, and topped it with a dollop of sour cream. Really gave it a southwest flavor! Will make again and again.
