About this Cook
Police Officer with a very busy schedule between work, home, kids, wife, and church. I enjoy running, spending time alone with my wife, and hanging out with the kids on my days off.
My favorite things to cook
I enjoy anything on the grill, and just started my hand at smoking. Nothing better than a good tenderloin off the smoker! I also enjoy baking desserts for the kids, as well as things that are quick and easy as we are always on the go.
My favorite family cooking traditions
Saturday brunch with eggs, pancakes, sausage, and fresh orange juice. I also like to work with traditional recipes from my grandmother.
My cooking triumphs
Kids prefer my cooking over their moms, who is a fabulous in the kitchen. Started growing and using my own herbs. A large garden that is doing very well this year! Looking forward to garden veggies, and fruit!
My cooking tragedies
Last year's garden was a tragedy, and nothing grew. We were looking forward to lots of zucchini and cucumbers. As far as tragedies, forgetting the tenderloin on the barbecue grill 6 hours later:(

BBQ Pork for Sandwiches
Feeding a family of 8, while being able to kick it up a notch to this recipe I use a large, yet inexpensive pork roast. I dump in a 40 oz bottle of Kraft barbecue sauce. (Sweet Baby Ray's isn't bad either.) Dump in 1 can of Coca Cola. (If your slow cooker is large enough, add 2 cans of Coke) Add 1 (8 ounce) can of mandarin oranges with juice. Add 1/2 cup brown sugar. Finally I add to that a 28 ounce can of diced tomatoes. Simmer overnight, remove pork and shred, return to the mixture, and serve over homemade rolls.
