Apple Banana Cupcakes

I thought these were pretty good. I followed the ingredients exactly and the only thing I did differently was to finely chop the apples instead of shredding. I didn't frost them but have been spreading low-fat cream cheese on them when I eat them for breakfast and that is quite yummy. I have been storing them in a covered container and a few days after making they are extrememly moist which makes it difficult to put the cream cheese on but the flavor is still good.

Apple Crisp II

I followed the recipe exactly and it was delicious. I used what apples I had on hand...a granny smith, some galas, and not sure what the rest were but they were slightly tart. Very good apple crisp.

Rosemary Ranch Chicken Kabobs

These were easy and yummy. I used chicken tenders and didn't make them into kabobs. I followed the rest of the recipe exactly except I used dried rosemary because I didn't have any fresh. I'm sure I will use this recipe many times in the future. I cooked them inside on a grill pan because I didn't feel like messing with the grill and they turned out great.

Baked Brie with Pesto and Pine Nuts

This is delicious and so easy. I couldn't find the seasoning either so I just made pesto sauce from a packet and used some of that. My 2 friends and I ate all of it. I'm making it again for an evening baby shower I'm hosting next week.

Meatball Sandwich

These are great. I've made them twice within the past 2 weeks. Both times I made them as spaghetti and meatballs and then use the leftovers to make meatball sandwiches. I had to leave the garlic and the seasoned crumbs (used plain) out the second time (our neighbors are allergic to garlic and onions) and they were still yummy. This will become my "go to" meatball recipe.

Cherry Poppyseed Twinks

Baked Corn

This was very easy and very good. It is called corn pudding where I am at and turned out exactly like corn pudding should. Everyone ate seconds at dinner and we gobbled up the leftovers the next day.

To Die For Blueberry Muffins

Delicious! I followed the recipe pretty much as written except for: used frozen berries, used 3 mini loaf pans because I didn't have a large muffin pan and the second time around I did cut the topping amounts in half and still had some leftover for the pans I was using. This one is a keepr.

I halved the recipe, used whole wheat penne and low-fat ricotta, it was delicious and very easy to make. I served it at a girls' night get together and my friends took home leftovers and the recipe.

Flavorful Beef Stir-Fry

I followed the recipe exactly (used apple juice) and I thought it was pretty good. I might double the sauce next time just because I like lots of sauce for my rice. I used top round steak. I was cooking just for me and it made a lot, but I am happy to have leftovers for lunch and another supper.

Apple Butter Pork Loin

Other than decreasing the cooking time to 90 minutes total as others suggested, I followed the recipe exactly and it was EXCELLENT! I made it as a test run for a dinner party I'm having in a couple of weeks and I will for sure use this recipe. The pork was very tender and the house smelled heavenly.

Sophie's Zucchini Bread

I thought this was just ok, it was a little dry for me but others at work really liked it. If I try it again, I will try adding some chocolate chips like I do to banana bread and will spray the pan as I had a hard time getting the loaves out.

Black Bean Vegetable Soup

I liked this but thought it needed some more "zip". I will make it again but will add extra beans for thickness and experiment with additional spices, etc. Cilantro might be a good addition.

Sugar Cream Pie I

I made this at Thanksgiving as a surprise for my brother who had asked that I make one for him sometime. He and his co-workers declared it the best sugar cream pie they had ever had in their entire lives and have already put in their "orders" for Christmas! I haven't actually tasted it yet but hope to the next time around.

Chili-Lime Chicken Kabobs

I've made these several times since I first came across the recipe last summer. It is delicious and the chicken is moist. I use whatever veggies I have on hand and generally marinate the chicken for a little over an hour. I definitely recommend trying this one.
