Jambalaya Casserole

I didn't have plain rice in the house and ended up using a spanish rice from a box. After reading the reviews that called for more spice I decided to add the seasoning packets from the spanish rice also. This turned out wonderful! Also I used hot italian sausage in it. Very good! Cut it in half unless you are going to have 12 people eating it or like to freeze left overs.

Crustless Spinach Quiche

I replaced the cottage cheese with plain yogurt, and used extra sharp white cheddar cheese. Also- I left out the broc and mushrooms since I just wanted spinach. I sauteed the onions with garlic snapes before adding to the mixture, and used fresh spinach that I blanched after chopping. Used regular eggs. People don't believe that there's no crust...definately cook til browned nice on top for the crust appeal without the extra calories and carbs.

Banana Cake VI

I made this for a birthday party and it was a hit! I added a bag of mini sem-sweet choc chips to the batter and the same choc chips around the outside edges after frosting it. I have a drawer freezer and had a hard time finding space to move this guy into out of the oven- so will plan ahead for that next time.

Ninety Minute Cinnamon Rolls

I made this for my family on Sunday and they loved them. I used 100% Stone ground Whole Wheat flour as well as Active dry yeast packet (verus the instant)- the difference is that you use the 1/4 cup water with some sugar to activate the yeast before adding it to the dry ingrediatns. I also used real butter. Very delicious!- My husband and daughter couldn't even tell that it was whole wheat!
