About this Cook
I am an elementary school music teacher, I will be entering my 7th year as a teacher in the fall. I am not married, but live with my wonderful boyfriend whose daughter is with us most of the time. I love to go out to sing karaoke, and listen to music whenever I can. I wish I went hiking and camping more. Oregon is a great place to live, close to everything: beach, mountains, desert, rivers. My favorite place to spend time is Cannon Beach, OR.
My favorite things to cook
Salads, sauces/dressings, chicken dishes, BBQ, Vegetables.....just about anything really. I'm not a very good baker, measuring ingredients isn't my forte.
My favorite family cooking traditions
My mom and grandma and I try to get together a bake Christmas cookies every year. Family BBQ's and Potlucks are my favorite.
My cooking triumphs
I learned to cook when I became vegetarian in college, mostly out of necessity. I did a lot of experimentation with different cuisines and after many trials became a pretty decent cook who didn't need to follow recipes anymore. Even though I eat meat again, learning to use vegetables and seasonings well as a vegetarian made me a better all around chef.

Totally put salt instead of sugar in lemon scones once YUCKY!

Pleasant Pork Chops
Deee-lish! I made the recipe as stated, just upped the seasonings a bit. The taste was awesome, and I had everything on hand already, so it was convenient as well.

Pumpkin and Sausage Soup
WOW! YUM! We loved it! I used Johnsonville Hot Italian Sausages, no butter, less brown sugar, added sage, spiced rum instead of praline liquor, and fat-free evaporated milk rather than cream. And, as others posted, it was SO good, perfect for this first cold and nasty day of fall! Definitely do puree it, but be careful, I blew the top off my blender because I put too much in at first. Thanks!

Mimi's Zucchini Pie
Yum! My whole family loved it! Used broccoli and yellow squash because I didn't have zucchini-also, didn't have onions so used 3 cloves of garlic crushed in with the eggs. I did add a healthy amount of salt and pepper and a little bit of Italian seasoning too. Great texture and taste, we all had 2 helpings. Thanks!
