Stuffed Cabbage Rolls

Reviewed: Jul. 25, 2009
this is totally different than what we normally have for dinner, and I have to say, it was a nice break. some changes: I also added Worcestershire sauce, garlic, and lemon. I used ham instead of hamburger (based off of a Julia Childs recipe,) and bread crumbs instead of rice since I accidentally burned the rice... I also baked in the oven, and lined the pan with leftover cabbage to avoid burning. it turned out pretty good! it was a little salty, so it probably could have gone without any added salt & Worcestershire sauce. I'd definitely make this again, next time with just a little less salt, and maybe I'll try adding brown sugar.

Classic Fish and Chips

Reviewed: Jul. 24, 2009
I made this for my boyfriend - he loves fish and chips. I don't really fry food ever, and didn't have the right type of pan (electric,) so I just used a big pot and crossed my fingers! I also didn't have enough oil, so I used what I had (about 50% of what the recipe called for.) I put the heat on medium-high, having no idea what temperature that might result in. I changed the batter recipe a little by using 50% milk and 50% beer, and also sprinkled Paps seafood seasoning on the fish before putting into the batter. I served with homemade Tartar sauce (using Trader Joe's mayonnaise, which I won't use for everyday use, but use a lot when cooking because it's cheap, and seems to have a better cooking taste/consistency than Best Foods.) My boyfriend LOVED this meal. He said that it's better than the fish 'n chips he gets out on the coast (and, it's a lot less expensive!) Next time I'll cook it just a little bit longer, but otherwise it was great!

Stuffed Shells I

Reviewed: Jul. 5, 2009
I cooked these for my ravioli-loving boyfriend. he liked them just as much as he likes ravioli! it was a nice change from our usual. we used pesto sauce instead of tomato, and I also added cheese on top. overall, it was really good. some of the noodles were a little dry, so next time I'll probably cover for longer.

One Bowl Chocolate Cake III

Reviewed: Jul. 5, 2009
I made this for a friends birthday. I cut the recipe in half for a one-layer cake, added some chocolate chips, a dollop of mayonnaise, and used home-made chocolate frosting. everyone loved it!! my one complaint is that it stuck to the pan, which is most likely due to the chocolate chips I used. I'm cooking it again right now, and I'm going to try adding the chocolate chips after a few minutes of baking since the batter is so thin. anyway, this will definitely be the recipe I use for chocolate cake going forward. love it!!

Banana Crumb Muffins

Reviewed: Jul. 5, 2009
I made mini muffins for a friends BBQ. They were a hit!! I used a little more bananas than recommended, and they were very moist. Yum!
