This soup is great! It makes A LOT of soup and there is just two of us, but it warms up wonderfully for lunches. I made this the "easy" way by sweating the onions and garlic in the oil, chopping the chicken breasts into large pieces and sauteeing for a minute, then adding the canned ingredients. I let it simmer for quite a while and then pulled the chicken pieces out to cool. The easiest way to shred that I've found is to use your fingers and pull them apart. It's super quick and easy.
