Oatmeal Peanut Butter Cookies

These were perfect! I made them to take on a girls weekend trip. I wanted oatmeal cookies and my friend wanted peanut butter so this was the perfect compromise. I didn't flatten them and they baked round and chewy. Even after a few days there were soft.

Cream Cake

This recipe was awesome. I made these for a wedding that I was making cupcakes for. I made an initial test batch and found them to have a slightly metallic after taste that I thought came from the baking powder. The next batch I made I decreased the baking powder to 1 1/2 t. and they were perfect! The texture was like velvet, the cake was a nice denseness and each recipe made 15 perfect cupcakes. I needed to make 12 batches of this recipe, but it goes together very quickly. The bride loved them. I froze a few that I had left over and they were great when I pulled them out.

Sandy's Chocolate Cake

Great cake! I made this for a friend's graduation party and it was great. It was easy to make and looked gorgeous. The layers were perfectly flat. I was a little worried about the frosting because I've had chocolate frosting with sour cream in it and didn't like it but this frosting was incredible. I had a little leftover and brought it in to work the next day and everyone ate it with pretzels. My dad isn't a chocolate lover but ate a piece and said it was super moist. Awesome!

Firecracker Grilled Alaska Salmon

Great recipe for salmon! I'm not a huge fish fan but this was very good and very easy. Made it for Father's Day and it was a hit. Definitely my go-to recipe for salmon now.

Three Cheese Green Salad

This is a great recipe! When I first read it I thought "what's the big deal?" but when we ate it it was terrific. I used good feta and fresh parmesan and substituted colby/jack for the swiss. My mom was eating it without the dressing and asked me what kind of dressing it was because it was great. I used regular good balsamic because I didn't have any white balsamic. Served it with Firecracker Salmon for Father's Day and it went over great!

Homemade Ginger Ale

This was fun and novel. It was fresh tasting and my guests liked it. Of course, everyone thinks you are a genius for making it. I added A LOT more ginger (double?) but it wasn't too much because the lemon is pretty pronounced. You have to S-L-O-W-L-Y open the cap.

Cajun Cake

Delicious and different. My father-in-law said it was possibly the best cake that he'd ever had. Very moist and flavorful. I added a splash of vanilla to the cake and another splash to the coconut topping. The topping stays syrup-like and is absorbed by the cake. I also toasted my nuts. MIL asked for some to take home. Great recipe!

Fruit Cocktail Cake

We really enjoyed this. I reduced the sugar in the recipe by 1/4 cup and also reduced the brown sugar that I sprinkled on top to 3 T and this was still sweet enough. It was perfect this way. I used canned peaches in juice that I diced up. This is a great recipe and you wouldn't know that it is low fat.

Creamed Onions and Sage

These were good. They smelled fantastic while they were baking. I would reduce the amount of time that the onions boil. They were a little sweeter that I expected but it was a nice, different side dish.

I made this for Christmas dinner for a change from jello salad. It was just okay and didn't really get eaten. I doubled it so it would fit in a 9" pie plate. It was okay.

Chicken Enchilada Soup III

This was really great! I was worried about the possibility of grittiness but mine wasn't at all. I bought a rotisserie chicken and shredded that to save time and also used 50% reduced fat cheddar. It was very thick (almost stew-like) so I added an extra cup of water with some boullion to thin it. I also added the drippings from the chicken. Delicious!

Blue Cheese Chicken Wing Dip

This dip was awesome! I made this for my Christmas Open House. I didn't have any problems with greasiness at all but I decreased the butter by just a little. My brother loved this. The only change that I made was that I drizzled the dressing over the dip after I baked it. Really great!

Sassy Chicken Enchilada Dip

Sooo good! Made this for my brother's "fight night" and everyone LOVED it. People were standing over the bowl instead of watching the fight. I didn't drain the tomatoes so my dip wasn't too thick. I didn't have any green onions but it was still great!

Warm Sweet Onion Spread

Really good and very easy! I made this the night before a party and let it sit at room temperature for about a half an hour before baking. I didn't have any trouble with greasiness and I sprinkled a little parmesan cheese on the top before baking. Very good!

Prosciutto and Parmesan Pinwheels

Really really good. I made these the night before my party and just sliced them before baking. I spread a nice amount of dijon mustard on the puff pastry and it gave a nice flavor combination. Very easy and good.

Won Ton Wrapper Appetizers

These were awesome. I made them for my Christmas open house. I made everything the night before and assembled them just before the party and baked them in batches. I had A LOT more filling that wonton cups so next time I would double them. I just froze the remaining filling for unexpected holiday guests. People loved them and kept asking when the next batch was coming out of the oven. A definite keeper!

Apple Pumpkin Muffins

These muffins are so moist and delicious! I added an extra two tablespoons of oil because I felt like I was stirring it too much to get the batter to come together. They are moist and perfect and the combination of apple and pumpkin is such a great fall combo! I brought them into work and everyone has raved about them.

Simple Country Ribs

I've made ribs a few times but these were delicious! My husband loved them and is asking when I'm going to make them again. I actually had four pounds of ribs so I cut them and stacked them in my pan. I didn't use very much water and my BBQ sauce in the end didn't need very much reducing. I used a really good bottled BBQ sauce. Great and easy recipe.
