Black Bean Quesadillas
This is great! I made it for our super bowl party tonight and everyone loved it. I put the black beans in the food processor with a little bit of cumin and red pepper. Then I mixed in a whole jar of salsa to give it a little more flavor. Be careful to not put too much of the black bean mix in the quesadilla or they will get a little messy when you go to cut them. Great, EASY and quick recipe!
