Easy Corn Salsa
refreshing! I left out the jalapeno and only used 1/2 an onion, used an entire lemon, and made it a little special by adding some shrimp (cooked quickly on a pan with a little oil and then cut into small pieces). Had it with pita bread for a light lunch.

Mississippi Mud Cake III
Great chocolate cake! Very moist and rich, one of my favorite chocolate cakes. I dusted the pan with cocoa powder and topped with strawberries. I'm pretty picky about chocolate cake, and this is definitely a keeper!

Black Bottom Cupcakes II
Excellent! I made them in mini-cupcake form (baked for ~10 minutes). I topped them with a cream cheese frosting (just cream cheese and powdered sugar to taste) and got lots of rave reviews at work. Was asked to make them twice more for special events!
