Sweet Carrot Salad
This is just wonderful. It's like carrots spiked with a sweet, juicy citrus note. Even my two-year-old gobbled it up!

Rum-Spiked Horchata
I made this drink without the rum, but it was absolutely stellar! My husband had never had horchata and now he is addicted!

Carrot Souffle with Brown Sugar
Absolutely stellar! I used only 1/2 cup of brown sugar, but otherwise did not change anything. I cannot thank Deanna enough for submitting this recipe. If you're looking for a fluffy, delicate, wholesome side dish, look no further. This is it!
