Great base. I think it depends a lot on the soy you use - next time around I'll try using a lighter sauce or at least a low sodium one, cos it was a little on the salty side. But ! The texture was great, and so easy to make, and really nice tasting. Instead of snow beans I used green beans, broccoli, green capsicum, shallots and tofu. Also threw in some cashews which I think was a very nice touch. Goes great over noodles. Thanks :)

Balsamic-Glazed Salmon Fillets

My mum loved this but I wasn't that impressed. I don't think the flavours complement the salmon that well, but perhaps thats more to do with personal taste. Had some extra marinade left over that I used on some pork the next day, which I liked a lot better.

Lemon Cream Cupcakes

Changing my review because these tasted a lot better the next morning. ...Ok but definitely not spectacular. Cake doesn't have much of a lemony taste but the texture is actually pretty good. Probably perfect if you like your cake with only a light lemon flavouring. Icing is delicious but a bit too sweet for my liking. Perfect lemon flavour but I think these would have been better if the icing was made of a icing sugar/cream or icing sugar/cream cheese mix.

Paella I

PERFECT. Used medium grain rice and full 5 cups of stock, although it ended up a little on the salty side so I may cut out adding the salt in the previous step or switch to a water/stock mix. Used baby octopus in place of squid, added 2 teasp of paprika and small amount of fresh chilli in place of saffron at the same time as adding the wine and it was divine! Highly recommended! Did this in a large fry pan and it served 6 although it was all gone!! Perfect with the lemon wedges!

Classic Spanish Sangria

Awesome and simple, would add some fruit next time. Can't believe how easy this goes down, you can barely taste the alcohol! Doesn't seem to taste any better the morning after so perhaps leaving it overnight isn't necessary. Goes great with a paella!

Basic Truffles

Pretty good basic recipe. Dusted mine with cocoa powder, didn't notice any bitterness. Would try with different coatings and perhaps liquer in place of the vanilla essence next time.

Roquefort Pear Salad

Amazing!! Used cashews instead of pecans due to allergy and it was delicious!!Had a mixed baby spinach salad with lettuce. Definitely use a soft pear.
